Fabulous Recipe Pick!



Yesterday I made my hubby a simple but yummy chicken soup recipe to feed his cold.  Guess he received the germs I received from my nephews little grubby fingers.  Oopsy!

Chicken Soup

Ingredients:

1pd Boneless Chicken cut into cubes
2 cups Water
1 cup Carrots
1 cup Corn (not creamed)
1 tablespoon fresh Garlic
1 tablespoon Olive Oil
1 tablespoon Red Pepper Flakes 
1 tablespoon Hot Sauce (Optional, used to give it that extra kick)
For seasoning I used one tablespoon each of Sazzon, Lawry's Seasoning and Parsley Flakes.  Wanted to add some flavor as soup can be bland. Please use the seasonings you prefer.

Instructions:

Place Olive Oil in a large pot and let it heat up for a couple of seconds.  Once heated enough place garlic and chicken in pot and stir fry for 1 minute.  At this time pour in water, carrots and corn.  Season with red pepper flakes and your preferred seasoning, let food come to a boil and then let simmer for 10 minutes. 

You will know chicken is done when it is no longer pink.  Once the food is done you can serve it by itself or over white rice or potatoes.  Remember to serve plenty of the broth as that will kick the cold.

Note:  Even though red pepper flakes were included it was not at all spicy but just right, it will definitely help to open up the sinuses.
